Its Football Time in Tennessee Part 3


Dorritos style chips (low carb of course!)
Wondering what you could put with your salsa, guac, & sour cream dips? Here is just the solution!
Recipe type: Appetizer
Serves: 36 chips
  • 1 large zucchini (shredded)
  • 2 eggs
  • 2 cups of cheese
  1. Preheat oven to 450
  2. Grease 2 cookie sheets
  3. Cut ends from zucchini. Shred. Then mix with egg & cheese
  4. Make 6-8" circles on greased cookie sheet(s).
  5. Bake at 450 for about 12 mins. Loosen & flip circles
  6. Bake another 5 mins.
  7. With a pizza cutter, cut rounds into triangles (about 6 per round).
  8. Let cool on rack fro 6-8 hrs in a cool oven.
  9. To store, keep loosely in a bag or plastic container in the refrigerator or on the counter. Best if used within a week of prep (as if they will even last THAT long!)
  10. After chips have dried substantially, in a plastic container, you can toss with your favorite popcorn seasoning for desired flavor

Stuffed Poblano Chilis
Recipe type: Dinner
Cuisine: Mexican
Serves: 3-6
  • 3 roasted poblano chiles
  • 1 lb of ground turkey (or ground beef or pork if you prefer)
  • 1 small onion (chopped)
  • 1 clove garlic (minced)
  • ½ cup salsa
  • 1 Roma tomato (diced)
  • 1 Tbsp Chili powder
  • Salt & Pepper to taste
  • 8 oz. Cheddar Cheese (shredded)
  1. After roasting, cool, then peel the chiles. Very carefully cut around the stem end of each chile. Pull out the stem & carefully pull the seeds out with your fingers (you could also just cut a lengthwise slit in them, open them flat & scrape out seeds/membranes)
  2. Brown the turkey, onion, and garlic; drain off excess grease.
  3. Stir in the salsa, tomato, chili powder and ½ of the cheese.
  4. Season with salt & pepper to taste.
  5. Fill the chiles with the meat mixture & roll up, you have split them open.
  6. Place the cut side DOWN in baking dish & top with remaining cheese.
  7. Bake at 350 for 15-20 mins until cheese is melted, bubbly, and AMAZING.

I love mexican food! And i LOVE this recipe that a patient recently brought me that she found on Linda’s Low Carb website. It is to die for…cheesy goodness with a spicy kick! As always from me, it is a simple recipe, simple ingredients, but BIG flavor. I have a lot of patients who say eating out at mexican is hard. While it can be tricky with all the tortillas & chips tempting us to indulge in their “carby”- selves, this is a great alternative to hit the spot. Not to mention, it can totally be frozen & re-heated throughout the week for a quick dinner.  Try it & I promise you will not be disappointed. (And at only 6 NET carbs, you can enjoy guilt-free!) So, go ahead…spice up your life! Have a great weekend everybody!

Reflections on Nigeria

So we’re back from a ten day medical mission trip to Nigeria. The images in my mind are numerous. Not surprising, since instead of seeing twenty-some people a day (as in my practice here), we would each see a hundred and twenty-something there – less thoroughly, of course, just trying to identify something with which we could help. There were the legions of patient, respectful elderly with the common complaints of “body aches” and “headaches”. No surprise given the hard physical work of farming by hand that many of them had done for decades. Their “bad vision” was usually caused, at least in part, by obvious dense cataracts needing surgery that was mostly out of reach for them.

The cases of malaria were so common that instead of saying they had “fever”, the person would say they had “malaria” since that was the most common cause of fever for them. Likewise, typhoid fever, which I never see here, was a regular on the list of diseases seen or suspected. Less severe, but still debilitating, were the frequent parasitic worm illnesses from unsanitary food and water. Frequent prescriptions of a de-worming medicine were administered to at least temporarily knock down the person’s worm burden.

As always on such trips, there are the more profound illnesses and maladies for which little can be done. There was the woman with an obvious advanced cancer of her salivary glands, far past the point of surgical cure. She had been informed of it six years before but didn’t have the money for surgery. Now it wouldn’t really help even if we somehow could arrange it.

Or the ten year old smiling boy who could barely walk. Further questions revealed that two weeks previously he had had a high fever, neck pain and severe headache. Nigeria is in the “meningitis belt” and in all likelihood this boy had survived untreated meningitis but had been left with a walking debility that will probably be life-long. Yet both he and his father repeatedly smiled at us thankfully for the little we could do.

Then there were the several young men with jaundice (yellow) evident in the whites of their eyes. This indicated liver disease, but what kind: hepatitis, cancer, parasite, yellow fever, malaria? With no access to an ultrasound, CT scan, or even blood work we were left to guess.

Perhaps most heart-tugging were the young women who would come in and with profound sadness explain that after several years of marriage they had not been able to have any children. In Nigeria, children are a particularly valued part of life and marriage. When we would explain that we were not equipped to work-up or treat this problem, their look of hopelessness would deepen. Yet, when we would pray with them it was always striking how their whole countenance revived.

At such times it would be wonderful to have the healing touch of Jesus. Our medicines and tools are so much less potent. But, at the same time, the rest of our team was presenting the good news of Jesus Christ to those eager to hear it. And one should not be quick to dismiss the impact and potency of this remedy for the soul. All in all, it was a very blessed trip and a reminder of how laden we all are in terms of resources and opportunities. Yet somehow, in the midst of all their unmet needs and difficulties, it was remarkable how content and even happy so many of the Nigerians were. As always on such trips, we learned and received more than we taught or gave.

ALDI review

Well I finally had a chance to go check out ALDI supermarket this week! Overall, it was a good experience but I had no idea how it worked and looked like a lost puppy I’m sure! Here’s my thoughts and tips if you go there…



  • A quarter. You put a quarter in the cart, shop and then return the cart to get your quarter back. They don’t have strong men to take your cart back for you.
  •  Your own bags. They do  have some bags there if you dont have or forget your own. I used their plastic bags for my meat.
  • Cash, Debit or EBT card. They don’t take credit cards to cut down on processing fees.

Be prepared to bag your own groceries!! After paying, you can move your cart to the bagging area and practice your skills.

What I loved…

  •  Prices! The fruits, veggies, nuts and poultry was awesome! I got a carton of strawberries on special for $0.99! My grocery bill was almost half of what is usually is.
  • Easy to navigate! Only 5-6 lanes so not overwhelming.

What I didn’t love…

  • You must go down the first aisle that is packed with PROCESSED, SUGAR FILLED food! In other grocery stores, you can typically avoid most of this by staying on the outside aisle. This is a nightmare when you have two babes begging for everything on the  aisle  or you are trying to make wise choices and it is thrown in your face right off the bat.
  • BE STRONG!! Turn the corner fast!
