Ok all, so here is a GREAT appetizer for you to share with your friends and family on game day, a tailgating favorite!!! Again, super duper simple! This is a trend with recipes I post, because I am super simple and can’t find a ton of time with a 19 mo. old running around! He likes to help with EVERYTHING when I am in the kitchen, so fast and easy is key!!!
one package of pepperonis ( you can use regular or turkey pepperonis- prefer nitrite free)
1 bag of cheese (8 oz)
8 oz cream cheese – softened
1 jar of pizza sauce (i find the lowest carb option- the last one I bought was great value – 3 net carbs for 1/4 cup)
1 package of low carb tortillas (to make chips out of of!) or raw veggies of your choice – such as celery, cauliflower, or carrots; I use the Extreme Wellness Low Carb High Fiber wraps (just find one no > than 5-7 net carbs; total carbs- fiber= net carbs)
or another good option is the Mission Low Carb wraps
spread softened cream cheese evenly in an 8×8 pan
pour pizza sauce evenly on top of cream cheese (you are going to be layering this)
next spread the shredded cheese on top of the pizza sauce
finally place pepperonis on top (enough to cover, may not need entire package)
Bake in oven at 350 for approx 20 min or until cheese is melted and golden brown
CHIPS: cut low carb tortilla into 1/8 pieces (like a pie). rub small amount of olive oil over top and lightly salt it. place on chip maker (see below)
I bought a chip maker from pampered chef, but I know many people who do it without. I find the chip maker adds some crispiness to them! and they are only $20-30 from either pampered chef, amazon, or Bed Bath and Beyond. I have also seen them on the target website! ( I tried to post a pic, but I can’t get my computer to cooperate :) If you just google pampered chef chip maker it will pop up! It has definitely been a great investment for us!
place in microwave for 1 1/2 to 2 1/2 minutes depending on microwave power. I would start with 1 1/2 min and if not crispy enough, increase by 15-30 second increments. This is a great way to get the crunch and enjoy “chips and dip” without lots of added carbs.
obviously you can always enjoy the pizza dip by itself, OR with some raw veggies such as celery!
The low carb chips can also be used with salsa or queso, another tailgating fav!!
If preparing an appetizer for a large group, prepare an entire pack of “low- carb wrap chips” for everyone to enjoy! Some say they are best right out of the microwave, but I think they are great even when made in advance! My husband and son enjoy them too, so it passes my test!!

4oz shredded cheddar cheese or colby jack cheese (reduced fat)
1/3 pack of reduced fat cream cheese (approx. 2-3 oz.)
(makes approx. 32 balls at about 1.5 net carbs each)
Preheat the oven to 375. Put all ingredients together in a large mixing bowl, and mix thoroughly-with hands. Cover baking sheet with foil (for easier clean up). Roll into small balls, place on baking sheet approx. 1/2 inch apart and bake at 375 until golden brown. Place on paper towels to absorb excess grease.
TIP: try dipping in creamy spinach dip or ranch dressing. Trader Joe’s has one of the cheaper prices for almond flour/meal. You can purchase preservative free sausage such as Swaggerty’s (a local company from Kodak, TN!!) or Jimmy Dean at Kroger.
Ok folks are you ready to “shake it up” a bit with some cauliflower?!!! Sounds exciting huh! :) Seriously, this recipe is super duper simple and loved by ALL, well most anyway! :) So, everybody loves some yummy buffalo wings and this is a super easy way to get in those veggies and provide a great side dish for any meal or appetizer for any get together, such as tailgating or other sporting events! Prep is so easy, the kids can join in the fun :) And what a great way to get them to try cauliflower when you soak it in some Frank’s hot sauce (that’s if they like the “hot” stuff! :)) The best part, only 7 ingredients and I guarantee you have at least 5 of them in your cabinet right now!!! Enjoy!
Make these up for any party or an amazing side dish. Frank’s Buffalo Style Wing Sauce is a must for this recipe.

1 large head cauliflower, cut into bite-size florets
Olive oil to drizzle
2 teaspoons garlic powder
¼ teaspoon salt
⅛ teaspoon pepper
1 tablespoon melted butter (Use coconut oil for vegan option)
½ to *3/4 cup Frank’s Buffalo Wing Style hot sauce or other hot wing sauce of choice
Other: 1 gallon or larger size plastic bag
*I probably use about ⅔ cup of hot sauce and they have just enough heat.
Preheat oven to 450F degrees.
Place cauliflower florets into plastic bag. Drizzle olive oil over florets to barely coat.
Add garlic powder, salt and pepper. Close bag and toss ingredients around so all florets are coated.
Place on ungreased cookie sheet or baking pan and bake on middle rack for 15 minutes, turning florets once during baking. Check them at the 10 minute mark for desired tenderness. You don’t want them to be soggy!
Remove florets from oven. Melt butter in medium glass bowl. Add hot sauce to butter. Toss cauliflower and stir to cover all florets with hot sauce.
Return to oven and cook for additional 5 minutes.
Serve with any dip you like, ranch dressing or Blue Cheese dip.
*** My best friend and I prepared this for our “better halves” one evening and they devoured it!!! We kept it in a few minutes longer because we liked the cauliflower just a bit softer. We also used a little more hot sauce because she could drink the bottle if you let her :) ha! but I am not that brave! So, they were a little hot for me but I bet 2/3 cup would be just perfect. We also did not add the butter and I am not sure why?? Either I was just out or we forgot but they still turned out fabulous so don’t let that stop you! They are super duper delicious with or without dipping sauce. Remember to put your dipping sauce out in a pre-measured amount to help you control portions with it! Dipping sauces can be full of sugar, however blue cheese and ranch are very low carb. Though low carb, they are calorie dense, so watch portions and try to keep around 2 tbsp or so! You don’t want to fill up on the dipping sauce, fill up on the super tasty cauliflower!!!! YUMMY! We also had a little left over and it re-heated well for the week!
GO BIG ORANGE!!!!!!!! YAY!!!! As Steph reminded us last weekend….IT’S FOOTBALL TIME IN TENNESSEE!!! Here is another fast and easy appetizer option! Its cheap, easy, and goes a LONG way!!! It can be prepared in advanced and enjoyed by many!!
2 blocks of cream cheese
1 packet of Hidden Valley Ranch Mix (you can do 1 1/2- 2 if you want a little more “kick” :)
1 package (8) of Low carb tortilla wraps (any flavor)- I use the Xtreme Wellness, Low Carb, High Fiber wraps (found at Ingles, Kroger, Food City, and Wal-mart; 5 net carbs/ tortilla)
Mix cream cheese and Ranch mix
Spread a thin layer over each of the low carb wraps
Roll wrap tightly and place in a large zip-lock bag
Place in fridge overnight
Next day: cut into 1/2 inch pinwheels and dip in salsa!!!
This appetizer is always a huge hit and it is soooo incredibly quick and easy! You can add ham or turkey to the roll ups for additional protein! Unfortunately I don’t have a picture, but they look very “festive” on a platter w/ salsa in the center. They look like you spent LOTS of time, but it only takes a few minutes to prepare (sneaky :)!!) A tip when spreading the cream cheese mixture; it can be messy! I lay out wax paper, or press-n-seal on the counter top and lay out the tortillas on top of that, this way when I spread the cream cheese mixture I can cover them COMPLETELY to the edge without making a huge mess! You want to cover them to the edge so that EACH bite has a great flavor. This is a great appetizer to take to football parties, wedding or baby showers, or church events! I always encourage my patients to take something healthy and this is a great “go-to”! ENJOY and GO VOLS!!!!
